Tofu Biryani Sweet Jasmine Rice
Growth is merely a by product of the challenges that you decide to take on. Some intern challenged me to cook Biryani Rice. Having never cooked Indian food before I confidently said I can cook it. I already knew I would not be able to cook an average Biryani dish but fear is not an excuse to not try.
Here's my attempt at cooking biryani rice my style. :D
Ingredients (2-4 servings)
- 1 cup of jasmine rice
- 1/2 of packaged tofu
- 1/2 white onion
- 1 golden potato
- 1/2 cup of sweet peppers
- 1 tomato
- 2 cups of broccoli
- 2 bay leaves
- 4 cloves
- 4 pepper corns
- 1 cinnamon stick
- water
- vegetable oil
- seasoning (Salt, Pepper)
Prep & Directions
- Do a little grocery shopping at target.
- Wash the rice and let it sit for 10 minutes.
- Cut the top of the tomato and place it in the middle of the rice. The tomato will cook with the rice and juices of the tomato will infuse into the rice.
- Dice up the potato.
- Dice up the white onion.
- Dice up the sweet peppers.
- Cut up the broccoli.
- Cup up the tofu into squares.
- Add vegetable oil to the pan. When the pan is hot, add in the cinnamon stick, pepper corns, cloves and bay leaves. Afterwards add in the onions.
- Add in the sweet peppers and cook until tender.
- Add in 1 cup of water, the potatoes, the tofu and a little something extra. Put on low heat and cook for 10-15 minutes.
- When the rice is ready, smash up the tomato with the rice.
- Add the rice to the pan and mix!
- Pack it up for your co-worker to eat for lunch and maybe taste test it.

It may not taste like Biryani Rice but as always it is the process that's always fun and rewarding.
