Soy Saucy Salmon

Persistence trumps all

"Fish makes you smarter" said my mom, as she places a piece of fish over my rice. My sister and I would chuckle as we knew there was no way eating fish would increase your IQ. As a child, every other day we would have fish on the table for dinner and every time she would tell us to eat the fish before she had some for herself. Did we end up smarter? Probably, not due to eating fish but because my mom's persistence and belief in eating fish that led us to work harder in our studies and raised our IQ by a point or two although IQ is a meaningless way to judge a person's intellect. It is also that persistence that led me to fall in love with seafood.

It's pouring outside today in NYC, it hasn't rained this hard in months. A perfect day for eating hot salmon. We will be making salmon using my mom's technique: steaming. Yea, it's that simple that my dog can make it. It's also healthy compared to fried salmon which is another way of cooking it. When you cook fish, the sauce is the second most important part besides cooking the fish right. The reason is that fish has a fishy smell (no duh), it's important for the sauce to overcome the fishy smell so your breath doesn't stick afterwards. The sauce contains soy sauce, ginger and scallion cause it's the typical asian seasoning then adding a few tomatoes because soy sauce is salty so the sweet tomatoes will balance out the sauce. On to the recipe!

Ingredients (2 servings)
  • 1 salmon
  • 1 tbsp sliced ginger
  • 2 sliced scallion
  • 2 tbsp light soy sauce

  2. Add water to a pan on high heat.
  3. Slice the ginger, scallion and tomato.
    prep the sauce
  4. Place the salmon on a plate and add the light & dark soy sauce. Add the seasoning.
    season the salmon
  5. When the water is boiling add the salmon to the pan.
    steam the salmon
  6. Salmon is very delicate! It's important to not overcook the salmon or it will taste like a piece of wood! Use a chopstick to check if the salmon is done. Around 10-15 minutes is the expected time for the salmon to cook.
    poke it
  7. Plate it!
Bon Appetit

Top it off with a side of rice and boy choy. Eat up and let me know if you got any smarter.
